Smoked Spaghetti Squash

 

Let me just start by saying, other than BBQ, spaghetti squash has literally been my saving grace since embarking on my health and weight loss journey. When I am not eating BBQ, I am probably eating all kinds of things stuffed in and over the top of spaghetti squash!  It is so versatile and so fun to eat! One minute it is this big giant, beautiful, edible bowl on your plate stuffed with, well, whatever you want, then the next moment it is the most delicious pasta you have ever tasted! I love it! 


Ingredients

  • 1 spaghetti squash any size

  • 1 Tbsp of Fool’s Gold Original or Salt & Sugar Free Rub

  • 1 Cup of Fool’s Gold Original BBQ Sauce


Prep

  • Cut the squash in half lengthwise. 

  • Using a spoon remove all seeds so the inside is completely clean.

  • On the meat part of the squash liberally apply the rub making sure to massage it into the squash.


Smoker Cooking

Temp: 225 | Time: 1 hour | Woods: Hickory, Alder, Cherry


Oven Smoker Bag Cooking

Can also be used on any grill or over a campfire
Temp: 475 for 10 minutes then 375 for 45-60 minutes  | Time: 1 hour | Woods: Hickory, Alder, Cherry


Range Top Smoker Cooking

Temp: Medium heat  | Time: 30-45  minutes | Woods: Hickory, Alder, cherry


Regular Range or Oven Cooking

It’s also possible to use your regular oven or stove (times and temps vary).  But, using a smoker or smoker bag will yield a more authentic “smoked bbq” flavor. Do NOT under any circumstances add Liquid smoke to any of these recipes or I will hunt you down!  


Finish

Using a fork, shred the meat out of the squash. It should come out with a spaghetti-type consistency.


Serve

Serve with mashed potatoes, pit beans and a piece of bread or bun.  The leftover smoked squash makes amazing pasta for any sauce or as a cold Asian salad!


Pro Tips

  1. Instead of shredding the meat into spaghetti, us the entire squash for a bowl and the meat becomes the best noodles and base for so many things like leftover Indian food, soups or as a bowl for your other leftover BBQ!!

  2. For a more mild spaghetti squash simply use a little salt and pepper and place each half of the squash meat down on a baking pan and roast for 30 minutes.
